Flo's Chicken & Spaghetti


This is such a nostalgic dish for me. I haven't eaten this for MANY years and I have never cooked it before myself. It's a meal my grandma would make a lot. I always remember as a child, the chicken and sauce simmering in a pan, it would smell up her house and we would always have this meal with buttered bread. My grandpa loved buttered bread. I would often have dinner there or breakfast before school depending on my parents work schedule. They were such great times and I cherish them.

My mother gave me the most information on the recipe she could remember and it's not many ingredients, but the flavor is there. It's a simple dish, but so good. The chicken cooking in the sauce brings this significant taste I remember from many years ago. The recipe may not be exact but the moment I tasted the sauce on the spoon while cooking, I knew my grandma was there helping me make this meal.

The recipe calls for:

chicken thighs or breasts (I used breasts, but my grandma used thighs)
1 large can of tomato sauce
1 small can of tomato paste
variety spices: garlic powder, oregano, chicken seasoning
salt/pepper
1 tbs olive oil
whole grain spaghetti (My grandma would use regular spaghetti)

-- Heat the olive oil in a large pot/pan. Once heated, add the chicken. Add salt, pepper, oregano, garlic powder and chicken seasonings to both sides of the chicken and cook the chicken.
-- Add the tomato sauce and paste to the pot/pan. Let this simmer for an hour.
-- Cook the pasta and add it to the pot/pan once the hour of simmering is finished. Stir and serve.

Clean Eating Baked Ziti

 

This dinner was a hit with this kid. :)  It's a 21 day fix approved recipe, Baked Ziti with ground turkey. YUM!

The recipe calls for:
1 pound ground turkey
1 pound whole wheat penne pasta
1 medium size part-skim ricotta cheese
1 tbs balsamic vinegar
2 cups organic/natural pasta sauce
1 tbs honey
1/2 cup part-skim mozzarella cheese
1tbs of each of these spices: garlic powder, italian seasoning, oregano, parsley, basil, black pepper

-- Preheat the oven to 350 degrees.
-- Cook the pasta al-dente.  While cooking, brown up the ground turkey in a pan. Drain any fat from the pan.
-- Mix in a large bowl all ingredients except the pasta and mozzarella cheese.  Combine the mixture with the pasta and put in a baking dish.
-- Sprinkle the mozzarella cheese, a little more italian seasoning and parsley on top of the ziti.
-- Bake for 20 minutes.

Some Healthy Food/Recipes

I don't get to do food shopping often because I can't bring my son Parker into stores yet, but on Friday I had a chance to go. I love food shopping. I wish I had more advance notice that I was able to go, I would've had a better list put together, but I got a lot of healthy food and organic food for my son.
 
flax/chia seed blend, ground chicken, organic quinoa, frozen veggies/steamables, organic bananas, organic green beans, frozen fruit, greek yogurts, organic apples, mushrooms, black bean organic pasta, zucchini & weight watchers string cheese
 
 
Here are some QUICK & healthy meals I made this week:
 

whole wheat penne with an avocado sauce I made which
was avocado, a little parm cheese, olive oil & pepper.
mushroom/spinach omelette with one ww string cheese
inspiration by a readers dinner the other night.



Another recipe was something my mom made in the crock pot. I wasn't feeeling well on Saturday and my parents came over so they brought dinner. It is a 3 point Weight Watcher chicken recipe.

This was breakfast this morning. A blueberry, strawberry smoothie. It was a bit sweet for my taste, but it was still good. I am going to try another kind tomorrow!
 
 
The recipe calls for:
1/2 cup frozen blueberries
1/2 cup frozen strawberries
1 tbs chia/flax seed blend
1/2 cup 1% milk
5.3oz fat-free blueberry greek yogurt

Total: 290 calories

Next time I am not going to use a flavored yogurt and try water, not milk. This should help make it less sweet and not as thick. To cut more calories use fat-free milk instead. I would've but I didn't have it on hand. The non-flavored greek yogurt is also less calories. Banana smoothie is next!

Bring On 2015, Off Goes the Baby Weight!


I am starting this year off on a great start! Prior to the new year and the typical new year's resolution diet that everyone starts, I lost 5 pounds during the holidays. That is something to be proud of! I have so much motivation to lose this baby weight and have a healthier lifestyle like I used to have in the past. I have some great support and if anyone needs help let me know. I am more than willing to be your motivator and/or help you with recipe ideas. Bring on 2015!

Here are a couple quick and easy dinners I prepared this past week, more recipes to come.

 
This recipe calls for:  whole wheat pasta (portioned out to be 350 calories), 1 can of fire roasted garlic tomatoes, garlic powder, steamed broccoli & parmesean cheese (optional)
-- Cook pasta per directions on the box, steam broccoli, mix the tomatoes, broccoli & garlic powder in a sauce pan & simmer for a little. Add the pasta to the sauce once cooked. Top with parmesean cheese if desired.
 
Side note: Fire roasted tomatoes are to die for! Officially obsessed with them!
 
 
This recipe calls for:  1 pound ground turkey, 1 bag of mixed frozen corn, black beans & peppers, 1 cup of salsa, pepper & minced garlic
-- Cooked the turkey in a non-stick pan, add to the crockpot with all the other ingredients. Cook for about 4 hours on low.

I am going to call my jar, "Jar of Happiness". This will be things that make me smile and laugh.  Little surprises. Special moments. Adventures. Memories I want to remember for a lifetime. Motivational and inspirational findings. Anything that just brings happiness to my days in 2015.

 
 
A goal, not a resolution for me this year is to become more crafty and have more of a natural lifestyle!

Cupcake Lasagna's

Great snack to make the kids instead of the processed frozen food like pizza bagels.  Pop them in the oven when they get home from school.  This is also a great party appetizer.
 
I kept the recipe simple because my husband doesn't like a lot of things, but it would be great with added ingredients.  Ground turkey meat to add some protein is a good option, then it's an easy dinner.  Also you could add chopped basil to the ricotta cheese mixture or your favorite spice/herb.
 
 
The recipe calls for:
wonton wrappers
marinara sauce
part skim ricotta cheese
part skim mozzarella cheese
garlic powder
 
-- Preheat the oven to 350 degrees.
-- Spray two cupcake pans with cooking oil.
-- Place two wonton wrappers in each cupcake hole, opposite of each other.
-- In a bowl, mix garlic powder and the ricotta cheese.
-- Add a little marinara sauce, a dabble of ricotta cheese, a little more sauce and a sprinkle of mozzarella cheese.
-- Bake for about 15 minutes or until the wrappers become crispy.

Creamy Avocado Sauce


The recipe calls for:
1 box of whole wheat pasta
1 larger sized avocado
1/2 of a lemon, the juice only
3 tbs olive oil
4 garlic cloves
salt & pepper

-- Bring water to a boil and cook the pasta per the box.  Approximately 8 minutes.
-- In a food processor blend the olive oil, lemon juice and garlic cloves.  I used a chopper because that's all I have.
-- Add the avocado and some salt to the food processor.  Blend until smooth and creamy.
-- Pour on top of the pasta, mix well and top with some pepper.
-- Serve immediately.

Other options for this recipe can be to add 1/4 cup of fresh basil to the food processor.  I love basil, but wanted to leave it out this time because my fiance it's a fan.  Next time I will definitely add the basil and serve this sauce over some healthy spaghetti squash instead of pasta.

Avocado doesn't reheat well so it's best to eat it fresh the day of making the recipe.

Caprese Lasagna Roll Ups

The recipe calls for:
8 whole wheat lasagna noodles
14 oz part-skim mozzarella cheese, shredded
3/4 cup park-skim ricotta cheese
1 large egg white
1/3 cup grated parmesan cheese
4 medium roma tomatoes, thinly sliced
2 garlic cloves, chopped
1/2 cup fresh basil, chopped
1 cup marinara sauce
a dash of pepper


 -- Preheat the oven to 350 degrees.  Cook the lasagna noodles like the package says.  Once they are done, spread the noodles on parchment paper.
-- Whisk together the ricotta cheese and egg white in a large bowl.  Then add 12 oz of mozzarella cheese, the parmesan cheese, the garlic and pepper to the bowl.  Mix well.
-- Add 1/4 cup of the cheese mixture to each lasagna noodle and spread evenly.  Top each noodle with 4 slices of the tomato and then some basil.  Roll each lasagna noodle.
-- Put 1/2 cup of marinara sauce into a 11 by 7 baking dish and spread it on the bottom so it's even.  Place all the lasagna roll ups in the baking dish and top each noodle with a little bit of the remainder of sauce, mozzarella cheese and a little basil.
-- Bake in the oven for approximately 25 minutes.  It will smell amazingly yummy! :)



This was honestly the best lasagna I've ever had.  I loved the fresh sliced tomatoes in this recipe as opposed to the ton of red sauce that's in regular lasagna.  I also prefer how this recipe doesn't have any beef or meat at all in it.   It is a great spin off regular lasagna that is healthy and a little different yet still so enjoyable!  To make it a little healthier than the original recipe I used the wheat noodles and to please my taste buds I added the garlic.  TRY IT!  You won't be disappointed, I promise.

A Summer/BBQ Classic

Macaroni salad without the extra calories & fat of the actual macaroni.  I know pasta is such a big comfort food of so many & no one really wants to give it up, but this recipe has ALL of the same flavors & ingredients in a lot of macaroni salads you see being sold in stores or made by your friends/family.  It's great for the warmer weather & would be perfect on your plate next to a yummy burger or hot dog.  Get grilling & enjoy this salad at your next BBQ!

The recipe calls for:
3 cups spaghetti squash
1/2 cup light mayo
1/2 tbsp yellow mustard
splash of white vinegar
1/2 cup chopped baby carrots
1/2 cup chopped celery
1/2 cup white onion
1 hard boiled egg chopped
1/2 tbsp stevia extract
salt & pepper to taste

-- Boil the egg for about 10 minutes then let it sit in cold water.  Peel & cut it up into small pieces.
-- Cook the spaghetti squash.  See my blog post "What Is Spaghetti Squash?" for instructions.
-- Chop the carrots, onion & celery.
-- Add all the ingredients to a bowl & mix.
-- Put the "macaroni" salad into the fridge until cool.
