Simple 3 Ingredient Recipe
Just three ingredients makes Coconut Rice & Beans...
The recipe calls for:
1 can black beans
1 cup jasmine rice
1 can light coconut milk
-- Bring the can of coconut milk and rice to a boil in a medium pot. Once to a boil, cover the pot and put it on low for 10 minutes.
-- Rinse the black beans.
-- When the rice is down, add the beans and mix.
-- You can season it with some salt and pepper if you want too.
The beans is a great source of protein! Enjoy!
