3 Day Cleanse

So I decided to challenge myself and do my very first cleanse. I have always wanted to try one out, but a lot of the ones I saw were mainly liquids only and that is not for me. I love food and I need to EAT not just drink or it wouldn't work for me and in all honesty it's not healthy.

The one I chose to do is mainly a raw diet, plant based, no dairy, no meat, no bread, NO COFFEE. I was inspired by a friend and kind of winged it and went with what I wanted to challenge myself with and what I could handle at the same time.

Not having coffee originally I thought was going to be my biggest challenge, but as much as I missed it, it wasn't the hardest part. (or the taste at least) After all I didn't drink coffee for my whole pregnancy with my son. For me the hardest was feeling really tired, which I guess could be connected to the coffee. Day 1 was a breeze for the most part because I was so excited about starting the cleanse, had everything prepped and a plan in place. When nighttime hit Day 1 I noticed I was slightly weak so I made sure I grabbed some nuts and grapes. At this time I didn't think I was consuming enough calories, but the snacks helped and I made sure to add more calories to Day 2. To make matters worse BAM I got my period which partly explained how I was feeling too. I went to bed at 9pm and got a little over 8 hours of sleep, plenty you would think right? Nope.

Day 2 I woke up to losing 2 pounds within 24 hours, I was happy! I also felt like I haven't slept in days haha. I had my more energized moments, playing with my son, walking around Target, prepping dinner...but the down times I felt like a zombie. Staring at the computer screen at work was rough. At any moment I thought I would fall asleep. Day 2 I knew I needed more food of substance and protein so that's why I packed a good portion of quinoa with my lunch.

Day 3 I woke up losing about 3 more pounds. This is really working I thought. I was super motivated to finish this personal challenge.

Day 4 - In a total of 3 days I lost a total of 6.8 pounds! It was so worth it, not extremely hard and I felt great after. This was such an accomplishment for me and showing myself that I do have will power that sometimes I think I lack. After this cleanse I felt like I was on top of the world. I got a well deserved large coffee in the morning haha.

I would 100% do this again and WILL be.


My Food Plan

Day 1:

Breakfast - Banana Smoothie w/ unsweetened Almond Milk
Snack - Grapes
Lunch - Salad w/ mixed lettuce, baby spinach, raw cashews, quinoa, tomatoes, avocado
Snack - Apple
Dinner - Lettuce boat tacos w/ mushrooms, zucchini, red peppers
Snack - Unsalted Peanuts
Snack - Grapes
Water Intake - 60oz lemon water, 32oz regular water

Day 2:

Breakfast - Banana Smoothie w/ unsweetened Almond Milk
Snack - Grapes
Snack - Raw cashews
Lunch - Quinoa, baby spinach, mixed veggies, avocado, splash of avocado oil
Dinner - Zucchini noodles w/avocado sauce & a side of roasted veggies (brussel sprouts, sweet potato)
Snack - Strawberries
Water Intake - 30oz lemon water, 64oz regular water

Day 3:

Breakfast - Banana Smoothie w/ unsweetened Almond Milk
Snack - Grapes
Lunch - Quinoa & roasted veggies (brussel sprouts & sweet potato)
Snack - Raw cashews
Snack - Strawberries
Dinner - Avocado & tomato mash, corn on the cob & a baked potato w/ a splash of avocado oil & a little garlic
Water Intake - 90oz lemon water

Meal Delivery Services

So I know these meal deliveries companies have been around for awhile. Hello Fresh, Blue Apron, Purple Carrot, etc. but we never tried them before. They are a bit pricey and out of our weekly budget for the regular price of the service, but with coupons they are very affordable. I always seem to see $30 off coupons, but after doing some googling I was able to find $40 off coupons. By using this coupon, 3 meals for 2 people each is only $20. This is so much cheaper than if all the supplies were purchased at a grocery store. The regular price is completely worth it also for the convenience and quality of food, but it's just not something we can afford. Finding a way around paying full price has been great because we are really enjoying the meals.
 
We have tried one week of Hello Fresh and one week of Blue Apron so far and are pleasantly surprised with the meals. My husband also loves cooking the meals and learning new recipes we can use in the future and small things you wouldn't think to do or mix together but works and tastes delicious. Plus it's a win win for me because I don't have to cook. Another plus is having my husband see that healthier options can taste good too and to broaden the types of food he eats. Who knew he liked radishes and cabbage?! :)
 
The meals only take about 30 minutes with prep and cooking which is not bad at all. They are full of flavor, there's a good variety of meals to choose from each week and are good portions. Portion size is one thing my husband was worried about. When we received the first box and saw all the supplies it didn't seem like enough for us, but once the meals were cooked and plated it was plenty. The only downfall is there isn't enough for leftovers for lunch the next day. We like leftovers but at the same time they seem to go to waste a lot too.
 
I have heard Hello Fresh is better than Blue Apron but from our experience they are equally as good.  We are excited to try more companies and more meals. Here are a few of our meals we've made so far, we as in my husband haha:

Feel Good Food

This is always something “people” say. People say a lot of things and you can’t always believe it all, but this you can. There have been times I totally blew that little saying “feel good food” off and thought it’s all BS. Then I would continue to eat whatever crappy food I was eating and the end result was not great.  Ding! Ding! Ding! There’s a reason why. Feel good food is a real thing. There’s so much truth in it. Eating that type of food DOES make you feel good, more energized, awake, less bloated and happier. I’ve experienced it a million times over. I eat bad food and feel depressed, fat and blah. I eat good food and feel good about myself and more alive.  I do more and accomplish more when I have whole grains, healthy fats and food in my body. When I eat bad I become lazy and sad.

Granted, I can treat myself to something “bad” and still feel good too, but it’s more so when the “bad” food consumes you and your entire day that you feel different.  One meal, one snack or something won’t make you feel crappy, it’s when over indulging happens and a whole day of bad choices go by. I personally like to enjoy food, good and bad but moderation is key.

Today I started my day with a big superfood, shakeology and packed a healthy protein filled lunch to fill me up until dinner tonight which is a healthy pizza option. Still gotta have my pizza! J Finding healthy alternatives to your favorite foods helps me a lot. I still have regular pizza on occasion of course but I like to have pizza quite often so having . A plan is good to have for the day or week because this will prevent eating out, bad choices and binge eating which we are all guilty of. Not everyone has time to work out or even cook so prep and a plan helps the week go more smooth.

Quinoa Cakes

 
You know me and quinoa, I love it and it's a great source of protein and a healthy food that fills you up. I ate these for dinner last week and really enjoyed them.
 
The recipe calls for:
 
2 cups quinoa, cooked
2/3 cup fontina cheese, grated
3 tbs flour
1 egg
2 tbs olive oil
2-3 chives
salt & pepper to taste
 
-- Add the olive oil to a pan and heat on medium.
-- Mix the remaining ingredients. Form patties, I used a 1/4 cup measuring cup.
-- Add the patties to the heated pan. Cook on each side for about 5 minutes.
 
I made an aioli to dip them in which came out great and paired well with the patties. I used minced garlic, a little mayo (light if you have it), a couple drops of lemon juice and a chipotle spice we had on hand. You can use any spice you prefer and can also substitute a different cheese if you wanted.

Flo's Chicken & Spaghetti


This is such a nostalgic dish for me. I haven't eaten this for MANY years and I have never cooked it before myself. It's a meal my grandma would make a lot. I always remember as a child, the chicken and sauce simmering in a pan, it would smell up her house and we would always have this meal with buttered bread. My grandpa loved buttered bread. I would often have dinner there or breakfast before school depending on my parents work schedule. They were such great times and I cherish them.

My mother gave me the most information on the recipe she could remember and it's not many ingredients, but the flavor is there. It's a simple dish, but so good. The chicken cooking in the sauce brings this significant taste I remember from many years ago. The recipe may not be exact but the moment I tasted the sauce on the spoon while cooking, I knew my grandma was there helping me make this meal.

The recipe calls for:

chicken thighs or breasts (I used breasts, but my grandma used thighs)
1 large can of tomato sauce
1 small can of tomato paste
variety spices: garlic powder, oregano, chicken seasoning
salt/pepper
1 tbs olive oil
whole grain spaghetti (My grandma would use regular spaghetti)

-- Heat the olive oil in a large pot/pan. Once heated, add the chicken. Add salt, pepper, oregano, garlic powder and chicken seasonings to both sides of the chicken and cook the chicken.
-- Add the tomato sauce and paste to the pot/pan. Let this simmer for an hour.
-- Cook the pasta and add it to the pot/pan once the hour of simmering is finished. Stir and serve.

Honey Garlic Shrimp

 
The recipe calls for:
 
1/3 cup honey
1/4 cup low sodium soy sauce
1 tbs garlic, minced
1 lb shrimp, uncooked, peeled & deveined
2 tsp olive oil
red pepper flakes
 
 
-- Combine the honey, soy sauce and garlic in a large baggie. Add the shrimp and mix it up so it is covered with the marinade. Let sit for however long you want/can. For me, I whipped this up quickly without much prep so it didn't marinate long, but you can marinate it during the day before dinner so more flavor is absorbed.
-- Heat olive oil in a pan on medium. Once heated, add the shrimp. Heat the shrimp until they are fully cooked through, make sure to mix it a little or flip the shrimp. Sprinkle some red pepper flakes on the shrimp while it's cooking.
 
I didn't get to go grocery shopping this weekend because I was away but next time I would add some sort of veggies. I think broccoli or edamame would go great with this. This time I just cooked a little quinoa and poured the shrimp over it.  7 pieces of shrimp was only 80 calories so I had 14 pieces.
 
This recipe takes only 10 minutes for prep and cooking. Can't beat that!

Monday Motivation


After an amazing fall weekend away and a couple months of major slacking compared to how I was prior to vacation...it's time to get back into the full swing of things.

No one can nor has to eat extremely healthy every meal of every day. It's a balancing act. I firmly believe that. For the most part when I'm on track I can balance this very well. The one part I seem to lack when it comes to the daily grind of it all is the exercise. I know I can do it. I have, a million times over. There was a time in my life I went to the gym every day and loved it. I don't have time, the money or the babysitter to do this now though so adjustments need to be made to still get what I need daily within my means.

I have the discipline, the desire and the motivation. In the summer I worked out 21 straight days in a row. This is something I have never done before in my life and I did this at my heaviest weight. I don't believe it's necessary to do it without any rest days or breaks but proving to myself I can made me proud.

Next week I start a group with my beach body coach, so this week I am preparing for that. I want to get into the groove of it all again which includes protein shakes/shakeology, working out, drinking enough water, food prep/meal planning and healthy grocery shopping.

I got a free 3 day pass to the gym by my work and I will be going there today through Wednesday. This is jump start my motivation for exercise. I made a protein shake for my breakfast today. I will concentrate on my water intake and make a point to drink even when I am busy at work. The next few dinners are planned for my family. I am ready!

I figured I would do a variety of exercises this week. The gym during my lunch break is one, some lifting at home and walking with Parker after school since it should be nice outside. I will be getting a new beach body workout dvd in the mail later this week called Country Heat. I like to have a good variety of workout dvds so I don't get bored and a plus is Parker should like this one since he loves dancing and country music. It can sometimes be hard being home with him and trying to get a good workout in. He loves to be on top of me, such a mama's boy, which I am not complaining about. This dvd should keep us both moving while also having fun.

Time to fall back in love with myself because I deserve to. Whose with me?

Quinoa Caprese Casserole

can't believe I haven't posted this recipe before. It's my absolute favorite quinoa recipe and I've made it many times or a family member has made it and we've split the recipe. Have you ever done that before? It is really helpful with food prep and keeps your meals more diverse. 

The recipe calls for:

olive oil
1 lb ground turkey
1/2 onion, chopped
red pepper flakes
8 oz frozen spinach
garlic, minced (I use quite a bit)
4 tomatoes, sliced
1/4 white wine
2 cups cooked quinoa
a bunch of fresh basil
fresh mozzarella, sliced or cubed
parmesan cheese

A substitute for the white wine could be chicken broth, you can also use the broth when cooking the quinoa instead of water for more flavor.

Another option is ground chicken or lean ground beef if you prefer.

-- Preheat over to 400 degrees. Spray a 9 x 13" baking dish or one a similar size with coconut oil.
-- Heat some olive oil in a pan. Add the ground meat, red pepper flakes and onion. Cook fully.
-- Add the garlic, white wine or broth and spinach (cooked/defrosted). Cook for a minute then add the cooked quinoa. Mix it all up.
-- Pour the mixture into your baking dish. Top with sliced tomatoes, slice mozzarella cheese and pieces of basil. Sprinkle some olive oil and parmesan cheese on top.
-- Bake in the oven for about 15 minutes.


I like to freeze leftovers into small containers and it's a convinent easy lunch to bring during the week.

Clean Eating Baked Ziti

 

This dinner was a hit with this kid. :)  It's a 21 day fix approved recipe, Baked Ziti with ground turkey. YUM!

The recipe calls for:
1 pound ground turkey
1 pound whole wheat penne pasta
1 medium size part-skim ricotta cheese
1 tbs balsamic vinegar
2 cups organic/natural pasta sauce
1 tbs honey
1/2 cup part-skim mozzarella cheese
1tbs of each of these spices: garlic powder, italian seasoning, oregano, parsley, basil, black pepper

-- Preheat the oven to 350 degrees.
-- Cook the pasta al-dente.  While cooking, brown up the ground turkey in a pan. Drain any fat from the pan.
-- Mix in a large bowl all ingredients except the pasta and mozzarella cheese.  Combine the mixture with the pasta and put in a baking dish.
-- Sprinkle the mozzarella cheese, a little more italian seasoning and parsley on top of the ziti.
-- Bake for 20 minutes.

Black Bean Hummus Wrap

 
HUMMUS
 
The recipe calls for:
2 cans of black beans, rinsed
2 garlic cloves or a spoonful of already minced garlic
2 jalapenos
1 tbs honey
salt & pepper to taste
 
-- Put all the ingredients into a food processor and you have hummus! Super easy! :)
 
I actually didn't add salt to mine, but the recipe says to and also I used the seeds to the jalapenos so it was extra spicy. I love spicy food, plus it helps me drink more water.
 
I am using the hummus for wraps this week for my lunches. The wrap is only 100 calories, it has flax seed in it. I just cooked up some zucchini and red peppers in a pan. I am going to switch it up each day, one day all veggies, one day maybe add cheese or just some lunch meat and hummus.
 
My brother has made this a few times as a dip with healthy dipping options. So delicious!

Quinoa Pizza Crust...Genius!

I was skeptical and worried about this recipe. I thought the crust would be soft and not crisp up, but I was wrong. This recipe is pretty much genius. It is such a good source of protein without having to add meat and you save so many calories than if you ordered pizza or even got a premade crust at the grocery store.  The crust had flavor and was crispy, especially along the edges. It definitely satisfied my craving and in a healthy way. The prep didn't take long at all, very easy.

This recipe was a huge success and one I will be using over and over! :)



The recipe calls for:
1/2 cup quinoa (I used rainbow)
1 1/2 cup water
1/2 cup shredded part skim mozzarella cheese
dried basil, few dashes
dried oregano, few dashes
garlic powder, few dashes
1 egg, beaten
spray oil

-- Preheat the oven to 350 degrees.
-- In a pan, bring the water and quinoa to a boil, lower the heat, cover the pan and cook for about 5 minutes or until all the water is absorbed.
-- Add the basil, oregano, garlic powder and mozzarella cheese. Mix it all together then add the egg and mix again.
-- Put foil on a baking pan and spray with oil.
-- Create a ball with the quinoa mixture and place on the foil. Spread out the "dough" so it is even.
-- Bake for 10 minutes, remove from oven and let it cool for a minute.
-- Add any toppings of your choice! I used a little pizza sauce we had on hand, some dabbles of part skim ricotta cheese and sliced black olives.
-- Bake for an additional 10 minutes.

The original recipe used shredded parmesan cheese and italian seasoning, any cheese or herbs you like would work though.

I could not be more excited about this recipe and I think you would be too. Try it out!

 
Making homemade pizza is all about fun and can be a great way to cook together as a family, kids and all. My son can't help just yet but babywearing helped keep him involved. He was very interested in everything I was doing. Kids would love adding the toppings and they can make it their own. You could easily make this into two separate crusts too so their creativity can come out. This is a good way to make healthy eating fun for them.

Some Healthy Food/Recipes

I don't get to do food shopping often because I can't bring my son Parker into stores yet, but on Friday I had a chance to go. I love food shopping. I wish I had more advance notice that I was able to go, I would've had a better list put together, but I got a lot of healthy food and organic food for my son.
 
flax/chia seed blend, ground chicken, organic quinoa, frozen veggies/steamables, organic bananas, organic green beans, frozen fruit, greek yogurts, organic apples, mushrooms, black bean organic pasta, zucchini & weight watchers string cheese
 
 
Here are some QUICK & healthy meals I made this week:
 

whole wheat penne with an avocado sauce I made which
was avocado, a little parm cheese, olive oil & pepper.
mushroom/spinach omelette with one ww string cheese
inspiration by a readers dinner the other night.



Another recipe was something my mom made in the crock pot. I wasn't feeeling well on Saturday and my parents came over so they brought dinner. It is a 3 point Weight Watcher chicken recipe.

This was breakfast this morning. A blueberry, strawberry smoothie. It was a bit sweet for my taste, but it was still good. I am going to try another kind tomorrow!
 
 
The recipe calls for:
1/2 cup frozen blueberries
1/2 cup frozen strawberries
1 tbs chia/flax seed blend
1/2 cup 1% milk
5.3oz fat-free blueberry greek yogurt

Total: 290 calories

Next time I am not going to use a flavored yogurt and try water, not milk. This should help make it less sweet and not as thick. To cut more calories use fat-free milk instead. I would've but I didn't have it on hand. The non-flavored greek yogurt is also less calories. Banana smoothie is next!

Shrimp Scampi with Zucchini Pasta

This was the first time I have ever cooked shrimp and it was a huge success. So delicous and low in carbs/calories. A good source of protein and a great vegetable to go along with it. This is such a different recipe than I normally make, but it is one I will for sure be making again. The shrimp was on sale so I splurged a little. It was also my first time using the Veggetti that I received as a Christmas gift from my brother this year. So easy to use!
 
 
The recipe calls for:
frozen, peeled, de-tailed shrimp (20)
2 medium-large zucchini
1/4 cup white wine
4 garlic cloves, minced
crushed red pepper
2 tbs olive oil
parmesan cheese
 
-- Use a veggie pasta maker and turn the whole zucchini into pasta. Pat with a paper towel to get rid of some of the excess water.
-- In a large pan heat the olive oil for about a minute then add the garlic and crushed red pepper. Heat this for about 2 minutes while constantly stirring so the ingredients don't burn.
-- Add the frozen shrimp to the pan and cook for about 5 minutes or until the shrimp is fully pink.
-- Remove the shrimp, add the white wine and cook for about a minute then add the zucchini. Cook a little while then add the shrimp in again. Cook for a minute or so while mixing the ingredients. I drained some of the liquid out of the pan to save some on some calories.
-- Serve with a little sprinkle of parmesan cheese on top and a glass of white wine. (optional)

Bring On 2015, Off Goes the Baby Weight!


I am starting this year off on a great start! Prior to the new year and the typical new year's resolution diet that everyone starts, I lost 5 pounds during the holidays. That is something to be proud of! I have so much motivation to lose this baby weight and have a healthier lifestyle like I used to have in the past. I have some great support and if anyone needs help let me know. I am more than willing to be your motivator and/or help you with recipe ideas. Bring on 2015!

Here are a couple quick and easy dinners I prepared this past week, more recipes to come.

 
This recipe calls for:  whole wheat pasta (portioned out to be 350 calories), 1 can of fire roasted garlic tomatoes, garlic powder, steamed broccoli & parmesean cheese (optional)
-- Cook pasta per directions on the box, steam broccoli, mix the tomatoes, broccoli & garlic powder in a sauce pan & simmer for a little. Add the pasta to the sauce once cooked. Top with parmesean cheese if desired.
 
Side note: Fire roasted tomatoes are to die for! Officially obsessed with them!
 
 
This recipe calls for:  1 pound ground turkey, 1 bag of mixed frozen corn, black beans & peppers, 1 cup of salsa, pepper & minced garlic
-- Cooked the turkey in a non-stick pan, add to the crockpot with all the other ingredients. Cook for about 4 hours on low.

Cucumber Salad

 
The recipe calls for:
4 cucumbers
4 tbs plain fat-free greek yogurt
1 tbs fresh dill, chopped
1 tbs white wine vinegar
1/2 tsp sugar
1/2 tsp salt
1/4 tsp pepper
1/4 tsp garlic powder
 
-- Peel, seed and slice the cucumbers as seen in the photo.
-- In a bowl mix all the ingredients, minus the cucumber.  Once the sauce is mixed good, add the cucumbers and toss.
-- When eating as leftovers just be sure to mix it up again.
 
Enjoy this refreshing side dish on a hot day!

Sodium Free Seasonings

I have been really cautious of the amount of salt I am consuming because I don't want to retain a lot of water weight during this pregnancy.  I found some salt free seasonings and have used them on steak and chicken this past week.  They have 14 different kinds: spicy, lemon pepper, italian, etc.

When I grilled steak the other day I used the garlic and herb seasoning and yesterday I used the chicken seasoning for my chicken.  I don't taste a difference with the missing salt in the seasoning.  It worked great for both meats and I will definitely be getting some more kinds to try.  The chicken made great leftovers for a salad today...

Simple 3 Ingredient Recipe


Just three ingredients makes Coconut Rice & Beans...

The recipe calls for:
1 can black beans
1 cup jasmine rice
1 can light coconut milk

-- Bring the can of coconut milk and rice to a boil in a medium pot.  Once to a boil, cover the pot and put it on low for 10 minutes.
-- Rinse the black beans.
-- When the rice is down, add the beans and mix.
--  You can season it with some salt and pepper if you want too.

The beans is a great source of protein!  Enjoy!

Mexican Chicken Salad or Burrito


The recipe calls for:
ground chicken meat
avocado, chopped
black beans, rinsed & drained
shredded lettuce
fat-free greek yogurt
taco sauce
taco seasoning

Optional:
shredded cheese
burrito wrap (whole-wheat is best)

-- Cook the ground chicken meat in a pan.  Mix in the seasoning packet and a little water.  Add the beans to the pan to warm them up.
-- Put chicken and bean mixture on top of shredded lettuce. Add chopped up avocado, a little fat-free greek yogurt and some taco sauce.
-- Mix it all up and enjoy your mexican chicken salad!
-- The other less healthy option is to put all those ingredients into a burrito wrap. If you choose this option use a whole-wheat wrap.


The meat mixture makes for great leftovers, I am eating it as we speak for lunch.

Arugula Walnut Pesto


HAPPY ST. PATRICK'S DAY!

This isn't an irish recipe, but it's GREEN and delicious!




The recipes calls for:
1/4 cup walnuts
1 garlic cloves
1 1/3 cup arugula, packed
3 tbs olive oil
1 tbs water
2 tbs parmesan cheese
dash of lemon juice
1/4 tsp salt
1/4 tsp pepper


-- Toast walnuts in a small pan on medium heat.  Make sure to keep stirring them so they don't burn.  Toast for about 5 minutes.  Let them cool.
-- Add the walnuts, garlic, arugula, olive oil, water, cheese, lemon juice, salt and pepper to a food processor or chopper.  Use what you have in your home.  I had a mason jar leftover from our wedding favors that were perfect to hold the pesto.


I used the pesto for a spaghetti squash meal.  Yum!

For this recipe just add a few more steps:

-- Cook a medium spaghetti squash.  See link.  Let the squash cool.
-- Scrape out the squash with a fork.
-- Mix the spaghetti squash and the pesto mixture in a bowl.
-- I heated up the spaghetti squash in the oven for about 5 minutes on 350 degrees and sprinkled a little extra parmesan cheese on top before putting it in the oven.  You could also just pop it in the microwave for a little.


Basil is one of my favorite flavors ever, but I must say this recipe and arugula substitute was really good and different.  The toasted walnuts gave it such flavor.
