Cutting Out Dairy

Being a mom of a preemie is a unique experience. From day one life has been slightly different than that of my mom friends. My son was 2 pounds 10 oz and exactly 10 weeks early. He stayed in the NICU for 6 weeks and it was so hard to leave him every day. You think you have a baby and get to go home with them and start this new journey as a little family. Our fate wasn't that, but that's okay, our journey was special. I am so grateful for the amazing hands on nurses, the doctors that made sure he had the best life possible, my family and friends for being their for me and mostly for my son and he was healthy, he just needed to grow. I made it my mission to make sure regardless of him being premature that he wasn't delayed in any way. I worked with him and still do every day to make sure he is always learning and growing. As a preemie mom, growing is something you always strive for and worry about whether it's their size or growing your childs mind.

My son has struggled with very bad allergies and some childhood asthma, has had two surgeries before the age of 3 and we were told he may need a third. I really did not want that to happen so I researched and explored different things to see if they could help and THEY DID!

He has had the tubes put in his ears like so many other toddlers as well as a hernia surgery in his groan. The one tube moved in his ear after almost a year and wasn't working anymore. It was still stuck in his ear and we brought him to the doctor and as suspected he had an ear infection. As soon as the one tube wasn't working, EAR INFECTION. Seeing this and knowing what I knew I immediately thought he would need a new tube put in. We treated the ear infection and made an ENT appointment with his previous surgeon. At the appointment he told my husband he had a lot of fluid in his ear but no infection. He removed the tube that was in the wrong place and told him to come back in 8 weeks. At that time I had it in my head, he had to get surgery AGAIN. I was so upset.

But after the research I did and the advice I received, things got better. I believe removing the tube had a good part of it as well. We think maybe since it was in the wrong place, but didn't fall out yet that it was preventing the flow of the fluids and it was making it build up. Along with that being removed, we stopped ALL dairy milk. Started him on coconut milk since he's had that before and then changed to unsweetened almond milk. The transition went good and we had no issues. He still eats dairy like cheese and yogurt but when it comes to milk, NO cows milk.

You hear about how dairy can affect congestion and mucus etc., well he is proof that is TRUE. With having no cows milk along with putting an essential oil mixture on his feet twice a day he is doing much better. His coughing, asthma issues and nasal congestion has decreased drastically. I am so happy we tried these two remedies and we will continue to do them in order to prevent things going back to the way they were. My son was sick all the time. Granted germs and other things have been factors since he does go to daycare, but this has limited those circumstances in a big way and for that I am grateful. He will get sick again of course but if by doing these two small things limits that even the littiest bit I am all for it! Anything to help my "baby".

We go for his follow up appointment in two weeks and I am very hopeful that he won't need surgery again. Fingers crossed!

Meal Delivery Services

So I know these meal deliveries companies have been around for awhile. Hello Fresh, Blue Apron, Purple Carrot, etc. but we never tried them before. They are a bit pricey and out of our weekly budget for the regular price of the service, but with coupons they are very affordable. I always seem to see $30 off coupons, but after doing some googling I was able to find $40 off coupons. By using this coupon, 3 meals for 2 people each is only $20. This is so much cheaper than if all the supplies were purchased at a grocery store. The regular price is completely worth it also for the convenience and quality of food, but it's just not something we can afford. Finding a way around paying full price has been great because we are really enjoying the meals.
 
We have tried one week of Hello Fresh and one week of Blue Apron so far and are pleasantly surprised with the meals. My husband also loves cooking the meals and learning new recipes we can use in the future and small things you wouldn't think to do or mix together but works and tastes delicious. Plus it's a win win for me because I don't have to cook. Another plus is having my husband see that healthier options can taste good too and to broaden the types of food he eats. Who knew he liked radishes and cabbage?! :)
 
The meals only take about 30 minutes with prep and cooking which is not bad at all. They are full of flavor, there's a good variety of meals to choose from each week and are good portions. Portion size is one thing my husband was worried about. When we received the first box and saw all the supplies it didn't seem like enough for us, but once the meals were cooked and plated it was plenty. The only downfall is there isn't enough for leftovers for lunch the next day. We like leftovers but at the same time they seem to go to waste a lot too.
 
I have heard Hello Fresh is better than Blue Apron but from our experience they are equally as good.  We are excited to try more companies and more meals. Here are a few of our meals we've made so far, we as in my husband haha:

Product of the Week

These are like a treat, but healthy! I really was surprised how much I liked them because they are "crunchy" and not chewy which I usually prefer. But they aren't really that hard compared to other granola bars I have had that aren't chewy.

The serving size is two bar for only 180 calories, 3 grams of protein and 3 grams of fiber.

Perfect snack or an addition to a breakfast or lunch. It is a good option for someone craving chocolate too!

Product of the Week

 
 
Hey everyone!  My beachbody friends on Facebook always talk about different extracts to add to their Shakeology like coconut, mint, almond, carmel.  Some of these are hard to find, but the Watkins line of extracts can be found at most Walmarts.  It is also sold on Amazon but it's about double the cost then Walmart which is about $3.00.  This is found in the baking aisle. Check it out when you are out and about next time.
 
I first added some to my coffee and loved it, now I also add it to my latte Shakeology. It would be a great addition to some homemade cookies instead of using vanilla too. I also heard the mint extract is great in chocolate shakes. I want to get the coconut one in the summer for that tropical feel to my drink.

Some Healthy Food/Recipes

I don't get to do food shopping often because I can't bring my son Parker into stores yet, but on Friday I had a chance to go. I love food shopping. I wish I had more advance notice that I was able to go, I would've had a better list put together, but I got a lot of healthy food and organic food for my son.
 
flax/chia seed blend, ground chicken, organic quinoa, frozen veggies/steamables, organic bananas, organic green beans, frozen fruit, greek yogurts, organic apples, mushrooms, black bean organic pasta, zucchini & weight watchers string cheese
 
 
Here are some QUICK & healthy meals I made this week:
 

whole wheat penne with an avocado sauce I made which
was avocado, a little parm cheese, olive oil & pepper.
mushroom/spinach omelette with one ww string cheese
inspiration by a readers dinner the other night.



Another recipe was something my mom made in the crock pot. I wasn't feeeling well on Saturday and my parents came over so they brought dinner. It is a 3 point Weight Watcher chicken recipe.

This was breakfast this morning. A blueberry, strawberry smoothie. It was a bit sweet for my taste, but it was still good. I am going to try another kind tomorrow!
 
 
The recipe calls for:
1/2 cup frozen blueberries
1/2 cup frozen strawberries
1 tbs chia/flax seed blend
1/2 cup 1% milk
5.3oz fat-free blueberry greek yogurt

Total: 290 calories

Next time I am not going to use a flavored yogurt and try water, not milk. This should help make it less sweet and not as thick. To cut more calories use fat-free milk instead. I would've but I didn't have it on hand. The non-flavored greek yogurt is also less calories. Banana smoothie is next!

Shrimp Scampi with Zucchini Pasta

This was the first time I have ever cooked shrimp and it was a huge success. So delicous and low in carbs/calories. A good source of protein and a great vegetable to go along with it. This is such a different recipe than I normally make, but it is one I will for sure be making again. The shrimp was on sale so I splurged a little. It was also my first time using the Veggetti that I received as a Christmas gift from my brother this year. So easy to use!
 
 
The recipe calls for:
frozen, peeled, de-tailed shrimp (20)
2 medium-large zucchini
1/4 cup white wine
4 garlic cloves, minced
crushed red pepper
2 tbs olive oil
parmesan cheese
 
-- Use a veggie pasta maker and turn the whole zucchini into pasta. Pat with a paper towel to get rid of some of the excess water.
-- In a large pan heat the olive oil for about a minute then add the garlic and crushed red pepper. Heat this for about 2 minutes while constantly stirring so the ingredients don't burn.
-- Add the frozen shrimp to the pan and cook for about 5 minutes or until the shrimp is fully pink.
-- Remove the shrimp, add the white wine and cook for about a minute then add the zucchini. Cook a little while then add the shrimp in again. Cook for a minute or so while mixing the ingredients. I drained some of the liquid out of the pan to save some on some calories.
-- Serve with a little sprinkle of parmesan cheese on top and a glass of white wine. (optional)

Product of the Week

I haven't posted anything since my son was born in June, but now I am back at it!

Let's start it off with a healthy, low calorie product I recommend...

I love chocolate and I love ice cream, but I don't love this baby weight.  This is a treat that satisfies my cravings and it's only 100 calories! :)  They also have ones with nuts on it and also dark chocolate covered frozen stawberries.  Try them out!

Starbucks Strawberry Smoothie

 
This drink has 16g of protein, 7g of fiber, vitamins, iron, a whole banana and is only 290 calories and 1g of fat for the non-fat milk option.  I haven't been to Starbucks for over 4 months since I am pregnant, it was nice to step foot in one again.  I missed it.  This may be sad but it made me feel like me.  I used to go there daily for coffee.  Obviously I couldn't get coffee because of the caffeine, but this is a great substitute and I finally get to use my christmas giftcards.  The baby needs mommy to eat a lot of protein so this is a great source.  I asked my doctor and made sure protein powder was okay to have before getting this.

Product of the Week

  
This smoothie is only 100 calories and requires no blender or added ingredients.  The directions say to heat it in the microwave for a little, but I just let it sit out for a little and it's good to drink.  These are a good source of vitamin C and very easy for people on the go.  They taste great.  The only downfall I saw was you can't really use a straw, more so a spoon since the packaging isn't deep enough.
 
I do like the Yoplait smoothies better but this is another smoothie option that is easier to just grab and go.

Product of the Week

I have been trying to find food that is high in protein because I need protein every meal for the baby.  I am not eating a lot of processed foods, but this is one of my exceptions.  It's naturally flavored so no added artifical crap that's bad for you.  It's perfect for on the go, has 8 grams of protein, high in fiber, lots of vitamins including folic acid for fellow soon to be moms and it is only 190 calories.  This oatmeal is made with multi-grain quinoa and comes in a few different flavors.  My favorite so far is the maple brown sugar crunch, great flavor and I love the nuts you add to it.  Other kinds they have are cranberry almond and cinnamon raisen pecan.  They come in a two pack and you can find them in the cereal aisle.

Baked Eggplant


The recipe calls for:
5 eggplant slices
1 can petite diced tomatoes, 14oz
1 can tomato sauce, 8oz
1 tbs olive oil
3/4 cup part-skim ricotta
3/4 whole wheat panko bread crumbs
1/2 egg substitute
1/2 tsp garlic powder
1 tbs garlic, minced
1/4 cup basil, chopped
1 tsp red pepper flakes
a dash of salt & pepper
cooking spray


-- Preheat oven to 350 degrees.
-- Add the diced tomatoes, tomato sauce, olive oil, minced garlic, chopped basil, red pepper flakes and salt/ pepper to a small pot. Heat on the stove on medium for awhile so all the flavors are brought out in the sauce. Let it simmer.
-- While the sauce is simmering, dip the eggplant slices into the egg substitute then dip them into the bread crumbs.
-- Mix the ricotta cheese and garlic powder.
-- Spray a baking dish with cooking oil and place the breaded eggplant slices into the dish.
-- Top the eggplant with the homemade marinara sauce then spoon a little ricotta cheese mixture on top of each slice.
-- Bake the eggplant in the oven for about 35 minutes.

Healthy Food Myth

A lot of people think that eating healthy is so expensive, but really it's not.  You go to a fast food restaurant and it's over $6 for a combo meal and that is just ONE meal.  So fast food being unhealthy isn't the only negative.


In this picture there is a bran/multi-gran muffin, apples, a bag of lettuce/veggies and a sweet potato.  

All this was only $4.85 and it makes up:
1 breakfast
2 snacks
a few lunches or dinner sides (salad)
1 side for dinner

Are You A Dessert Lover?

Just a few ingredients and about only 170 calories depending on how much fat-free cool whip you add to it.  To me it was just as satisfying as a restaurant dessert, but about 1,000 calories less.  I freeze the cool whip so it's kind of like ice cream which is something I crave very often especially with the warmer weather now.
 
Heat the fiber brownie (any flavor you like) in the microwave for about 15 seconds, scoop on some fat-free cool whip and indulge in this healthy dessert option!

Cut Costs & Cut Calories, Coffee Style

In today's economy I think most people are trying to find more and more ways to cut every day expenses.  With doing this we still want to be able to enjoy things that we love though.  We can't give up everything or life wouldn't be as enjoyable.  For me my favorite cost is Starbucks coffee.  It's something that immediately brightens my day.  As much as I know I could do without and I do do without it when it just can't fit it into my budget on certain tight months/weeks, sometimes you just need to have it.

"Coffee makes it possible to get out of bed, but chocolate makes it worthwhile."

My usual drink is a Grande Non-Fat Mocha (only one pump, no whip), this is the basic mixture of espresso and chocolate, two of my favorite things.  The normal grande size has four pumps of mocha (all flavored espresso drinks have four pumps at a grande size), but to cut calories I only get one because it's just enough to taste the mocha without it being overbearing.  Sometimes too much chocolate is too much, believe it or not.  You can do without all the pumps in all of their drinks if your thinking about your waistline.

A way to cut calories and also cost is to make your own espresso drink, but still with the taste of Starbucks signature espresso.  If you have a espresso machine, like I do, just purchase Starbucks espresso beans, but even with having a maker I rarely actually make it myself.  It's just easier and for me faster to just stop in the Starbucks I pass daily.  But I more recently found something for the Keurig that you can put in your own espresso beans, grounded already.  It's called a reuseable filter, check your local Kitchen product stores.  This is much easier and faster then using an espresso machine.  So purchase your favorite espresso beans, whether it's Starbucks, Dunkin Donuts or wherever and enjoy brewed espresso from your home!

Today I decided to save some cash and instead of ordering my normal hot drink at Starbucks I made a hot chocolate k-cup at home with my Keurig.  This is made with water obviously so the lack of milk will save quite a bit of calories.  This is my substitute for the chocolate flavor.  Then I made an espresso k-cup with my Keurig, mixed them together, added a little cinnammon and creamer.  It was my very own Mocha.  Granted it's not completely the same and I will still enjoy my normal drink from Starbucks when I can, but it's good to know of other options.

Grande Mocha - $4.33
2 K-Cups & Creamer - About $1.60

That is $2.73 of savings per day!

Also, at the coffee shops they have great smelling fresh baked goods that may be hard to pass up.  By not being around them you could possibly save on unneeded calories!  Make something or grab a healthy breakfast bar from home.

Healthy Sun-Day

Weekends make it tough sometimes to stay active and eat healthy especially for me, but since I have started to really make it a part of my lifestyle it's much easier.  I seem to have better control too.  I went grocery shopping last night and got a lot of healthy and clean eating items.  It's weird but I actually crave healthier foods now instead of the fattening foods filled with nothing good for your body.  At Wegman's last night I was surrounded by bagels, donuts and very sugary muffins, but I choose a multi-grain carrot and apple muffin.  Eating that and a cup of skim milk was a great way to start my Sunday.

I also bought some flatbreads at Wegman's which I have never seen before at Shoprite.  The brand is "Flatout".  They are only 90 calories, 5 grain flax, great source of fiber and 53% fewer net carbs.  They are small flatbreads that are a good shape so they can also be folded in half for sandwiches or panini making.  I highly recommend them.

After relaxing at home for a bit I decided to venture out, get some coffee and drive around looking at new hiking places.  I ended up stopping at the local farm to pick up a tomato so I could use it for my lunch.  Local produce is fresher, less likely to be contaminated, tastes better and helps support your local farmers.  Having farms close by is a huge plus, not only because of the fresh food, but also it's a great atmosphere.  I got to get some sun and see some animals that brightened my day...


The duck and roaster were both very vocal and cute.  The roaster was actually waking everybody up in this picture haha.  I also saw lots of goats, bunnies and an adorable pig.

The tomato I got at the farm was perfect for my flatbread pizza I made for lunch.  I put little bit of olive oil on the bread, added slices of fresh tomato instead of tomato sauce and then sprinkled some dried basil and part skim mozzarella cheese.  Delic!  Notice the shape I was talking about...


I headed to Shoprite after the farm because I forgot to get water last night.  I got a mini work out in by carrying the water to the car and up two flights of stairs.  Every little bit counts!  :)
